Technically you don’t have to seal the top of the bag as long as it’s out of the water. You could just fold the bag over the side of the container and secure it with clips.

Yeah, it has this strange little what looks to be perforated line towards the bottom of the bag, so I wasn't sure if that would break down in the heat. Thank you!

Those are fine. I haven't used them, but the "stay open" feature may even make it so you don't have to fold over the top (as one usually does) to fill them. The stand up bottom feature is really helpful.
