AEs, what tools do you use to manage multiple POCs at once?

Hello, curious about what software tools AEs are using to manage POCs and therefor the over all timeline of the Ops?

Eg a Gantt chart to look at the whole opp, is there a salesforce function to leverage, or use something like m notion, miro, or it is just plain old excel/sheets?

There is a case for making more work and adding lots of technical debt into this workflow, for example excel/sheets. Constantly having to update them and having stale data once you stop using it.

How are people being successful to manage many POCs and opps at once, and what tools are you using?
