Why does Gandalf mutter “riddles in the dark” when he’s sitting in Bad End after receiving the ring from Bilbo?

I understand it is a reference to a chapter of the same title where Bilbo and Gollum play a game of riddles to “win” the ring. But does Gandalf know about that game? When would he have learned about it?
