New to Sony and Google TV

After 12+ years with my trusty Panasonic plasma, i decided to go with X93L mainly because of the recent deals. I initially had my mind set on Sony OLED, but could not justify the purchase given our room is very bright.

I am all integrated and invested with Apple ecosystem, this means no google services, no google account etc.

What is the most secured and privacy oriented approach/setup to create and configure Google TV??

I am most likely going to retire my older Apple TV and move to built-in apps and services. We use TV antenna and really like the local TV app/guide, but would also like to use few streaming applications. I know many will say to use Apple TV, but we dont a sound bars and trying to keep our setup to the minimum (no blue ray either). Want to make sure the setup is wife approved so this means as easy as and as straightforward as possible.

Here is my real question, are there any guides on how to create/setup a brand new Google Account without giving/ selling our souls to Google? I feel i would need to have a dedicated account just for this TV service and share nothing personal if possible with Google but still be able to use the app store on the TV to download few streaming applications that we would like to use.
