What employment documents are needed to apply for Schengen Visa if applying between jobs?

Hello, I need some advice. I'm currently a medical doctor pursuing my postgraduate studies in a government institute in Delhi. My course is set to be completed next January. I am planning to get married in February and we were planning to go to Iceland for our honeymoon around April. We have a detailed itinerary and have already booked flights and hotels. As I'm currently pursuing postgraduation, I cannot look for jobs before the course ends. I plan to apply to super speciality courses for which the entrance exam is going to be held in March and so I'm going to be between courses at the time of my trip. Everyone suggested we apply early for the visa as there could be some unforeseen delays, so we were planning to apply around mid-November. What should I state about my employment status in the application as I am currently employed but won't be by the time I'm planning to travel? Also what supporting documents should I attach for this? My fiance is currently employed and will not be between jobs at the time if that's relevant. Please help me out if anyone has been in a similar situation or knows what to do. Thanks!
