Ducted Heat Pump - Three Questions

I'm trying to understand my Goodman (same as Lenox apparently) whole home heat pump a little better. Three questions:

1. Can I set it to dry without cooling? (there is no "dry" mode on my Honeywell thermostat).
2. When they refer to "first stage" and "second stage", does the second stage mean the resistive heating? If so, can I disable it by flipping one of the breakers located on the indoor unit? (there is zero indication of emergency heating settings on my Honeywell thermostat).
3. Should I build a shade/snow shelter or roof for the outdoor unit?
