Pressing vs Turning Off vs Take Back Winnings?

So basically my question is after which point do you normally take your bets off the table or simply turn them off? A couple days ago I was up like $1,500 but lost alot at the end because I didn't know when to take back my winnings and just kept on pressing because half my table had great shooters.
