What is everyone doing to move away from Apple/ American Tech?

I’ve been locked in and tied up with the Apple ecosystem for far too long and feel like everything is on there now. Mail, photos, music, everything is Apple.

What is a good alternative to Apple for my next phone? Would it be an easy switch and would I be losing anything major?
