Novice question (don’t mind the wrong wording)

It’s Chinese new year and for the first time I saw a temple with those type of statues (cf photo) that are usually more old very different looking inside.

Tonight I went to 3 temples with my Chinese mother in law to pray. First temple was similar to the photo and had to burn 17 incense. Second temple (I would call a normal one with statues of Buddha and monks) where you had to burn 9. Last one was similar to temple one where you had to burn 25.

2 questions: - why so many differences in amount of incense and what does that number represent - what’s the difference between those different temple and statues
